These little treats hit you with four distinct textures and flavors in one little bite. Sam and Eli helped me choose this recipe to share for the school’s teacher appreciation day. I thought they’d be fun for the kids to prepare, but not sure if it was an appropriate adult treat. The result was a very pleasant surprise! The cookie was more like a chewy, fudgey brownie. (Actually, I decided to change the name from chocolate-covered marshmallow cookies to marshmallow brownie bites.) The pecan gave balance to the super-sweet marshmallow. They’re like neat little individually packaged brownies, no mess trying to cut through marshmallow. We’ll be making these again real soon ’cause dang, it was hard giving them away!

Yields 3 dozen (calorie estimate: 136/cookie)
Ingredients
1 cup margarine
1 cup sugar
1 egg
1/4 cup milk
1 teaspoon vanilla extract
1-3/4 cups all-purpose flour
1/3 cup baking cocoa
1/2 teaspoon baking soda
1/2 teaspoon salt
18 to 20 large marshmallows
ICING:
6 tablespoons butter, softened
2 tablespoons baking cocoa
1/4 cup milk
1-3/4 cups confectioners’ sugar
1/2 teaspoon vanilla extract
pecan halves
Directions
In a large bowl, cream butter and sugar. Add egg, milk and vanilla; mix well. Combine the flour, cocoa, baking soda and salt; beat into creamed mixture.
Drop by rounded teaspoonfuls onto ungreased baking sheets. Bake at 350° for 8 minutes. Meanwhile, cut marshmallows in half. Press a marshmallow half, cut side down, onto each cookie. Return to the oven for 2 minutes. Cool completely on a wire rack.
For icing, in a small saucepan, combine butter, cocoa and milk. Bring to a boil; boil for 1 minute, stirring constantly. Cool slightly; transfer to a small bowl. beat in confectioners’ sugar and vanilla until smooth. Spread over the cooled cookies. Top each with a pecan half.

One question: I noticed you used margarine in the cookies, but butter in the icing. I rarely have margarine; would shortening be a better sub than butter, or would butter work throughout the recipe?
Hey Becca! Actually, I did try the recipe again, no margarine in the house so I used butter. The consistency was more cakey cookie than chewy brownie, but the flavor was about the same. I think I’d opt for the crisco over butter, but it’s a matter of personal preference I suppose. Let me know how they work out for you.

I just made them with my 5 year old daughter – we used butter – they are very rich and she loves them without the pecans but I love them with pecans!! Thanks for posting this – we will make them again for sure.
