salted caramel butter bars

I’m a total sucker for anything “salted caramel”–gelato, macarons, chocolates–you get it. So when Anna showed me this recipe, I immediately rearranged my schedule so I could make (and eat) these bars ASAP. Please note that when I say “rearranged my schedule,” I mean “took this opportunity to justify skipping out on the gym.” Bad, I know. But eating butter and sugar while watching the predictably melodramatic series finale of Desperate Housewives is basically equal to working out, right? (Yes, I said Desperate Housewives. I’m also a sucker for crappy TV, but no need to discuss that now.)

Anyway, my laziness was rewarded because these bars were delicious . . . one coworker may have used the term “phenomenal.” (Hey I’m not trying to brag, just trying to convince you that you need these bars in your life.) So I guess what I’m saying is this: stay home from the gym, or toss out your to-do list, or procrastinate those errands, or just do whatever you need to do to make these salted caramel bars your highest priority. I promise they’re worth it!

coconut-key lime bars

OK, Ashley and I have noticed a trend in our post write-ups: easy and delicious.  Although we do love a challenge when we have some extra time (and I swear it’s not due to an uncreative or unimaginative vocabulary!), easy and delicious just seem to be our style.  So here’s another amazingly easy and delicious recipe that we highly recommend.  Seriously, even if you’re not a big coconut or lime fan, you could really enjoy these treats.  And by the way, we tried a few other disappointing coconut and lime recipes (love you Martha, but this pie was deceptively beautiful) before striking gold with this one.  So when we say delicious, we MEAN delicious!  Promise.

heath bar blondies with brown butter frosting

These blondies had me at Heath, but the brown butter frosting sealed the deal.  I shared them with our church choir, as well as a fellow foodie (that’s you Kari!), and all agreed that these were delish.  The base was a solid blondie, nothing too fancy, but hard to go wrong.  And then there was the frosting… We thought the technique of browning the butter and then chilling it was a clever trick. The result?  Pillowy frosting with a depth of flavor that was just so unique and very worth the effort.  Seriously, we are now looking for an excuse to slather this frosting on absolutely anything.  Also, I made a batch with butterscotch chips instead of Heath, so if you’ve no Heath on hand or it’s not your fav (gasp), try butterscotch chips!  Just as tasty. red velvet cheesecake brownies

Gearing up for Valentine’s Day (so glad, I was starting to get post-holiday depression), and there’s no better excuse to try a new red velvet recipe.  These brownies weren’t super sweet, so they weren’t my favorite, but both my husband and 9-year-old said these were the best treat I’ve made in a long while.  Just like red velvet cake, the chocolate flavor is a bit milder, but the consistency is fudgy and moist, which I love.  Also, in my experience these are much better the next day, which requires patience I simply don’t have.  If you’re a fan of cheesecake brownies, and you don’t like sickly sweet desserts, you’ll absolutely love these!  And they’re quite pretty, if I do say so myself. samoa blondies

Holy freakin yum!  I have made these multiple times over the last year in hopes of getting a good picture, and every single time they are gone before I can get the camera out.  Actually, the batter is so, so delicious, that it’s hard enough just to get them in the oven, let alone allow them to cool, cut them into presentable squares, and then wait to partake while I arrange and shoot.  Forget about it.  They really are reminiscent of the girl scout samoa cookie (my absolute fav), but I can honestly say these are better.  And these are SO EASY!  Seriously one bowl, they’re mixed and in the oven in less than 15 minutes.  (more…)

sugar cookie bars

Top ‘o the morning to ya!  I’ve wanted to make these sugar cookie bars for soooo long and I found St. Patrick’s Day to be the perfect opportunity.   You know, ’cause they’re green.  We shared this batch with Andrew’s English class at church and I’ve plenty leftover to share with some family friends coming tomorrow night.  Seriously, this recipe made a whole bunch.  And dang they were easy!  Tasty too.  A touch on the dry side, but I did overcook them by a couple  minutes, so that can be easily remedied.  Overall, great flavor and simple to prepare.   Highly recommend.  (more…)

fudgy peanut butter chocolate chip blondies

Wow, it’s been such a long time!  We took a family vacation to the Southern Hemisphere (Australia and New Zealand to be exact) for some sun this winter.  Oh how I love hotels!   No dishes, no vacuuming, not even bed making if you don’t feel like it.  But, on the other hand, no kitchen aids or butter and brown sugar.  They did have some amazing bakeries down under, and we managed to get along just fine on lambingtons and lots of Cadbury chocolate.  But once we returned I went straight for this peanut butter and chocolate recipe.  What a great way to make a comeback!!  Rich, gooey, and delicious…pure baking decadence in every way.  In my opinion they’re the perfect marriage of brownie and cookie.  So completely satisfying.  (Oh, did I mention that they’re easy too?)
