Gearing up for Valentine’s Day (so glad, I was starting to get post-holiday depression), and there’s no better excuse to try a new red velvet recipe. These brownies weren’t super sweet, so they weren’t my favorite, but both my husband and 9-year-old said these were the best treat I’ve made in a long while. Just like red velvet cake, the chocolate flavor is a bit milder, but the consistency is fudgy and moist, which I love. Also, in my experience these are much better the next day, which requires patience I simply don’t have. If you’re a fan of cheesecake brownies, and you don’t like sickly sweet desserts, you’ll absolutely love these! And they’re quite pretty, if I do say so myself.

First, this picture was taken with an iPhone. Usually I wouldn’t share it, but the cake was too amazing to keep quiet. Ashley and I had so much fun making this together for Christmas Eve dinner. Mom made a fabulous prime rib and the whole family feasted like we’ve never feasted before! Our favorite part was most definitely Ashley’s chocolate buttercream – OUT OF THIS WORLD! Absolutely amazing.

The moment I saw these I knew I had to make them. Chocolate covered cherries in cookie form? YES! They were festive, different, easy, and delish. Fun new twist for a cookie exchange this season. Here’s the only thing, personally I would much prefer a fudgyer (that does not look right, is that a word?) cookie, so next time I’m going to try these cookie/brownie recipe from my Marshmallow Brownie Bites. That’s just me, but I still found every bite of these very tasty and really enjoyed sharing them!

I haven’t been a big brownie fan lately. Not sure exactly why, never quite the right recipe and probably too many of the boxed variety at potlucks, playgroups, and other such gatherings. I’d forgotten what a good brownie really can be. Luckily, my little Sam kept begging this month for marshmallow brownies, so I finally gave in. Man I’m glad I did! Made these for the first time and they were A-MAZING! I know that I describe almost all my food as rich and sweet, but these are near the top of the list. Still, with the walnut addition, the decadence is more than bearable, it’s absolutely divine. Oh, and they’re so pretty too, quite impressive looking if baked in a cute pan. They went too fast, already planning when to make and share these again this week!

Salty and sweet. Crunchy and melt-in-your-mouth. Peanut butter and chocolate. Dangerous and delicious (you know what I mean). One little bite, so much to experience. Yum, yum, yum! I love the idea of red velvet cupcakes, but they never turn out as tender and moist as I imagine they should be. I’ve made a few recipes from scratch and I’m just never quite satisfied. Until now. Ashley suggested doctoring up a cake mix sorta like her pistachio cupcake recipe, and the results are super tasty! Really, these were very rich, moist and just what I’d imagined a red velvet cupcake could and should be. Our Aunt Honey had a laugh that was like no other; big, unabashed, and absolutely infectious. It brought a smile to every face as quickly as did a bite of her fabulous marble cake. We drove to Richmond each holiday season eagerly discussing and anticipating both the laugh and the cake. On the off year we didn’t make the trip, you could bet we’d receive a very heavy box in the mail delivering a fresh and beautiful marble cake wrapped securely in loads of foil. She knew we just couldn’t do Christmas without it.

My pumpkin supply is running short here in Asia, but that’s OK because I was forced to try something different this fall. I’d completely forgotten how amazing the perfect chocolate cake can be! I’ve never had a go-to recipe, but when I saw this in Bon Appetit it looked like I had met my match. I don’t go for light and fluffy when it comes to my cakes, particularly the chocolate variety. I like dense (check), rich (check) and moist (check). The cake was fab. And the frosting? Beyond. Dangerous. Anytime I need a chocolate cake, this will be on the menu. Seriously, didn’t even miss my pumpkin in the middle of October, that’s how good it was!
