oreo stuffed chocolate chip cookies

More cookies!  Don’t worry, I’ll change it up next week when I’ve got a birthday, can’t wait to try a new cake recipe.  (Haven’t decided on one yet, so I’m open to any ideas!!)

But as for these, I’d been drooling as I watched them circulate the blogosphere for months!  Couldn’t wait to try them, but I had to get my hands on some double stuff Oreos first.   You know, I’m not a big fan of the plain, ol’ Oreo cookie (there are so many other things I’d rather have for the calories), but when they are paired with something else, magic happens.  Bring on the Oreo cheesecake, the Oreo dirt dessert, and of course the cookies-n-cream ice cream  and shakes.   See?  Magic!!

I finally got to make these to share at my boys’ cub scout meeting.  (They just started and they are all so cute by the way.  What a great excuse for me to try a new recipe every week!) I knew they’d be so fun for kids, and who else could handle this much sugar than a bunch of high energy 8-10 year old boys?  Needless to say, they were a hit.  (more…)

First, sorry for the LONG delay since the last post.  Ashley and I have both been in transition.  She between jobs and apartments (although still in Brooklyn), and I across the ocean.  My family is finally starting  to settle back into life in the states (Northern Virginia to be exact), as plain ‘ol Americans.  Anyway, despite our best efforts, we’ve both still got what surely qualify as tiny kitchens.

OK, explanations and apologies over, now on to the treats!!!  I know, I know, these cookies aren’t quite as flashy as our usual posts, but TRUST ME, they are so worthy!  I absolutely love the consistency, unlike anything I’ve had before, it must be the combo of oil and butter, doesn’t that sound healthy?  But who cares?  Trust me, they’re worth every bite.  And besides, they’ve got oatmeal, cornflakes, and nuts… all good things!  I’m sure it all balances out in the end.  I found these over at Lovin’ From the Oven over a year ago, and despite the glaring absence of anything chocolate, something about her description made me want to give them a try.  So, so glad I did.  If you need a little change from your favorite chocolate chippers, definitely make and share these cookies.  Yumzo! Top ‘o the morning to ya!  I’ve wanted to make these sugar cookie bars for soooo long and I found St. Patrick’s Day to be the perfect opportunity.   You know, ’cause they’re green.  We shared this batch with Andrew’s English class at church and I’ve plenty leftover to share with some family friends coming tomorrow night.  Seriously, this recipe made a whole bunch.  And dang they were easy!  Tasty too.  A touch on the dry side, but I did overcook them by a couple  minutes, so that can be easily remedied.  Overall, great flavor and simple to prepare.   Highly recommend.  (more…)

lemon melting moments

So I’ve been making lots of rich choco desserts lately.  Definitely no regrets, but it was time for a change.  We love a good lemon treat around here, lemon bars are the absolute best (especially the ones we used to get at the local Amish market…really, no words for how good those were), but everyone has a standard lemon bar recipe in their back-pocket.  Lemon melting moments sounded like a yummy alternative.  I think they’re an Australian treat, and since I’ve recently visited Australia I feel I’m now quite the expert on all things down-under.  (OK, not really, but still…)  These cookies literally melt in your mouth, probably due the abundance of butter and cornstarch.  If you love lemon bars, you will also love this sweet treat.  (more…)

These were just for a little fun.  They’re so easy for kids to decorate and produce a cute and recognizeable outcome!  We had friends from age 2 – 9 decorating with chocolate and vanilla frosting and a variety of candy options.  Just use my favorite sugar cookie recipe, add some cocoa powder to the buttercream frosting (to taste) and decorate away!  (more…)

Sugar cookies…yum!  These aren’t the beautifully decorated, professional-looking variety.   But these are soft and melt in your mouth (probably due to the sour cream, I love baking with sour cream).  And they’re sweet, but not too sweet (of course the frosting makes up for that).  Even Andrew loves and frequently requests these, and he’s not much for sweets (weirdo).  (more…)

Major computer issues last week, MAJOR.  Back up your files!! I’ve shed a few tears, not gonna lie.

But these knock-off cream pies didn’t make me cry.  Well, maybe some tears of joy.  Ain’t nothin’ like the real thing?  Guess what, these were EXACTLY like the real thing.  No, they were better…honest to goodness.   Oh, and bonus, you can manipulate the filling to cookie ratio to suit your own taste.  (Can you tell?)  Took me right back to lunch box days in elementary school.  Happy, happy times.  I wonder if there’s a comparable Star Crunch knock-off…?  (more…)

Low(er)-fat, lower-sugar chocolate chip cookies?  They look yummy, right? I SWEAR they taste at least as good as they look.  But it’s honestly true, they have proportionally half the butter of any other chocolate cookie recipe I’ve ever tried.  At first I thought I read the recipe wrong, so I researched.  (more…)

I hate the words, “cool completely before cutting.”  I’m sure most people have the necessary restraint, but I invariably cut (and eat) far before my desserts have cooled.  The result?  Slightly burned mouth and not so pretty presentation.  But I never learn my lesson, nope, doesn’t stop me from doing it again the next time.

I’ve wanted to make these bars since I saw them over at Lovin’ From the Oven around Christmas time.  It took me seven months to assemble all the ingredients here in Japan.  (more…)

Did you know they changed the oatmeal cookie recipe on the Quaker Oats box?  It’s true!  I make them so often that I recognized the difference right away, less butter AND less sugar.  That’s just not right.  I was making these for a Kyoukai no Shokujikai (OK, really it was just our church potluck), but I hadn’t planned to post the recipe.  “It’s always available on the box,” I told myself.  (more…)
