caramel apple cake

Posted on: October 9th, 2012 by Two Tiny Kitchens 9 Comments

Well, if you’re gonna take a whole month to post, you’d better come back with something as fabulous as this Caramel Apple Cake!  September is always a super busy time — getting the kids back to school, soccer, PTA, scouts, lots of football to watch, etc.  In the meantime, Ashley’s no help at all this fall, she just started law school at Brooklyn Law!  (How cool is she?  But busy, very busy.)  Anyway this cake was worth the wait, promise!  The recipe is slightly adapted from Baked Explorations, which we trust fully.  The cake was so moist and dense, it could have been enjoyed with no frosting at all (not something I say often).  And wow, the Caramel Buttercream!  (more…)

chocolate oreo (birthday) cake with cream filling

Happy Birthday, Sam! My little boy turned 9-years-old last week, can’t believe how time flies. Naturally, I love every family birthday!  I am always excited for an excuse to bake the most fabulous cake my loved one can possibly imagine. We spend lots of time during the year dreaming up complicated, exotic, and decadent variations. So what did my sweet little Sammy request this year? My most creative child, with the seemingly limitless palate? “The white bread cake with white frosting, please.” Yup, that translates to white cake with whip cream on top.  Hmmmmm… not so exciting. Especially since Ashley, along with other long-lost family members, was coming to visit for the week. We had the chance to bake together in the very same tiny kitchen, and he requests white.   (more…)

german chocolate cake cookies

Have you ever noticed how how polarizing nuts can be!?  Seriously, I feel as though everyone I ask either LOVES the nuts in baked goods, or HATES the nuts.  A personal example – my 8-year-old Sam is the LEAST picky eater I’ve ever met.  Seriously, when  he was home last week with pneumonia I wanted to baby him and asked what he’d like to eat – ice cream, chicken soup, anything his heart desired.  What does he request? Brussel sprouts!  Honestly, when we lived in Japan he’d try every strange smelling/looking food that the rest of us backed away from.  We’d all watch in awe while he sampled raw octopus, fermented soybean, and pickled plums, just to name a few.  The one thing Sam absolutely refuses to eat?  Baked goods with nuts!  Is there anyone who is feels lukewarm on this issue?  (more…)

snickers cake

Posted on: March 28th, 2012 by Two Tiny Kitchens 7 Comments

So, let me just tell you right up front, there are no snickers in this cake.  BUT, there are are nuts, chocolate, and ooey, gooey caramel.  All the good stuff, so… close enough!?  The kids love this cake with the surprise inside.  No frosting necessary, so it would make a good birthday cake.  (I think that sometimes the ice cream and the frosting fight each other, am I alone?)   But whether it’s for a birthday, or just for satisfying your sweet tooth, I do recommend serving with a healthy dollop of ice cream or whipping cream.  Quick, easy, delicious!   (more…)

These here bars are some of our absolute favorite treats of all time!  We know we love them, and we know they are delicious, but when we actually make them they manage to far exceed expectations, EVERY TIME!!  Raspberry and almond are truly a match made in heaven.  (more…)

chocolate strawberry celebration cake

First, this picture was taken with an iPhone.  Usually I wouldn’t share it, but the cake was too amazing to keep quiet.  Ashley and I had so much fun making this together for Christmas Eve dinner.  Mom made a fabulous prime rib and the whole family feasted like we’ve never feasted before!  Our favorite part was most definitely Ashley’s chocolate buttercream – OUT OF THIS WORLD!  Absolutely amazing.

marble cake

Our Aunt Honey had a laugh that was like no other; big, unabashed, and absolutely infectious.  It brought a smile to every face as quickly as did a bite of her fabulous marble cake.  We drove to Richmond each holiday season eagerly discussing and anticipating both the laugh and the cake.  On the off year we didn’t make the trip, you could bet we’d receive a very heavy box in the mail delivering a fresh and beautiful marble cake wrapped securely in loads of foil.  She knew we just couldn’t do Christmas without it.  (more…)

bon appetit’s chocolate (mayonnaise) cake

Posted on: October 29th, 2010 by Two Tiny Kitchens 4 Comments

My pumpkin supply is running short here in Asia, but that’s OK because I was forced to try something different this fall.  I’d completely forgotten how amazing the perfect chocolate cake can be!  I’ve never had a go-to recipe, but when I saw this in Bon Appetit it looked like I had met my match.  I don’t go for light and fluffy when it comes to my cakes, particularly the chocolate variety.  I like dense (check), rich (check) and moist (check).  The cake was fab. And the frosting?  Beyond.  Dangerous.  Anytime I need a chocolate cake, this will be on the menu.  Seriously, didn’t even miss my pumpkin in the middle of October, that’s how good it was!  (more…)

pistachio cupcakes

These cupcakes are delicious, incredibly moist (which is mostly likely attributed to the full cup of oil), and embarrassingly easy to make. It’s a little tough to get these cupcakes to look lovely due to the nature of the frosting, but seriously, every time I make these cupcakes, people’s reaction never fails to disappoint–the phrase “Best cupcake I’ve ever had!” has been used more than once.  (more…)

gooey butter toffee cake

They say a picture is worth a thousand words. Not in this case.  Just couldn’t capture the allure of these bars with a photo.  The name gives you a better idea of their decadence, but to truly understand these must be eaten.  Probably the most addictive things I’ve posted so far, and that’s saying a whole lot.  I made them on a Tuesday afternoon to share with friends the next day.  (more…)
