Have you ever noticed how how polarizing nuts can be!?  Seriously, I feel as though everyone I ask either LOVES the nuts in baked goods, or HATES the nuts.  A personal example – my 8-year-old Sam is the LEAST picky eater I’ve ever met.  Seriously, when  he was home last week with pneumonia I wanted to baby him and asked what he’d like to eat – ice cream, chicken soup, anything his heart desired.  What does he request? Brussel sprouts!  Honestly, when we lived in Japan he’d try every strange smelling/looking food that the rest of us backed away from.  We’d all watch in awe while he sampled raw octopus, fermented soybean, and pickled plums, just to name a few.  The one thing Sam absolutely refuses to eat?  Baked goods with nuts!  Is there anyone who is feels lukewarm on this issue?  (more…)

OK, Ashley and I have noticed a trend in our post write-ups: easy and delicious.  Although we do love a challenge when we have some extra time (and I swear it’s not due to an uncreative or unimaginative vocabulary!), easy and delicious just seem to be our style.  So here’s another amazingly easy and delicious recipe that we highly recommend.  Seriously, even if you’re not a big coconut or lime fan, you could really enjoy these treats.  And by the way, we tried a few other disappointing coconut and lime recipes (love you Martha, but this pie was deceptively beautiful) before striking gold with this one.  So when we say delicious, we MEAN delicious!  Promise.

Holy freakin yum!  I have made these multiple times over the last year in hopes of getting a good picture, and every single time they are gone before I can get the camera out.  Actually, the batter is so, so delicious, that it’s hard enough just to get them in the oven, let alone allow them to cool, cut them into presentable squares, and then wait to partake while I arrange and shoot.  Forget about it.  They really are reminiscent of the girl scout samoa cookie (my absolute fav), but I can honestly say these are better.  And these are SO EASY!  Seriously one bowl, they’re mixed and in the oven in less than 15 minutes.  (more…)

OK, Girl Scout cookies only come around once a year in the states. So come on, how often do you think they come around in Japan?  Extremely rare commodity, I just had my first taste in five years.  Shanita gave me a box of the originals a few weeks ago.  Unfortunately, she gave them to me right in front of two other American friends, so I did what I had to do, I split my loot three ways.  That left me with five precious, perfect samoas.  Shoulda been one for each family member, right?  Wrong.  Naturally, I ate all five.  (Yeah, Andrew was pretty upset when he found the empty box.)  (more…)

Coconut and pineapple give these cupcakes a tropical flavor.  Think pineapple-upside-down cake meets smooth coconut cream.  Or piña colada in cupcake form.  Who’d say no to that?  These are definitely rich!  But so tasty that even my Japanese friends (who claim to find American treats far too sweet) went for seconds.  (more…)
