Two treats my husband loves – peanut butter kiss cookies (which, ok, just about everyone loves, but also, everyone knows how to make) AND chocolate covered cherries. monster cookies (with brown butter)

Never, ever, ever, let me buy my trick-or-treating candy ahead of time again.  Because it’s half-way gone.  And it’s only been three days.  I can see the way the scales are turning this week.  So, I’ve surrendered to the inevitable.  It’s better just to finish the bag off quickly, right?  The faster you eat, the fewer the calories?

Well, as long as we’re stuck inside waiting for this big storm to come and go, I thought I’d get rid of some of the candy by baking and sharing these monster cookies.  They are really just a fabulously rich and chewy recipe for brown butter chocolate chip cookies, one of my new favorites!  (Brown butter should be added to the ranks of chocolate and bacon, it can make almost anything better.)  So, throw in some Kraft caramels and some orange m&ms and you’ve got a real, bona fide Halloween treat!   (more…)

Have you ever noticed how how polarizing nuts can be!?  Seriously, I feel as though everyone I ask either LOVES the nuts in baked goods, or HATES the nuts.  A personal example – my 8-year-old Sam is the LEAST picky eater I’ve ever met.  Seriously, when  he was home last week with pneumonia I wanted to baby him and asked what he’d like to eat – ice cream, chicken soup, anything his heart desired.  What does he request? Brussel sprouts!  Honestly, when we lived in Japan he’d try every strange smelling/looking food that the rest of us backed away from.  We’d all watch in awe while he sampled raw octopus, fermented soybean, and pickled plums, just to name a few.  The one thing Sam absolutely refuses to eat?  Baked goods with nuts!  Is there anyone who is feels lukewarm on this issue?  (more…)

gooey s’mores cookies

Who doesn’t love a fun new twist on the s’more? I’ve got so many bookmarked, it’s hard to decide which one to try. This version includes a good amount of graham cracker crumb in the dough, along with Jet Puffed Mallow Bits, which remind me a lot of the Lucky Charms marshmallows. The Mallow Bits are absolutely genius in this case, because they don’t disintegrate when they’re baked, like the real marshmallows tend to do. Complete the s’more trifecta with mini Hershey Kisses, chunks of a giant Hershey’s bar, or, my favorite, Ghiradelli’s large milk chocolate chips. WOW! Portable s’mores, campfire not necessary.   (more…)

Top ‘o the morning to ya!  I’ve wanted to make these sugar cookie bars for soooo long and I found St. Patrick’s Day to be the perfect opportunity.   You know, ’cause they’re green.  We shared this batch with Andrew’s English class at church and I’ve plenty leftover to share with some family friends coming tomorrow night.  Seriously, this recipe made a whole bunch.  And dang they were easy!  Tasty too.  A touch on the dry side, but I did overcook them by a couple  minutes, so that can be easily remedied.  Overall, great flavor and simple to prepare.   Highly recommend.  (more…)

lemon melting moments

So I’ve been making lots of rich choco desserts lately.  Definitely no regrets, but it was time for a change.  We love a good lemon treat around here, lemon bars are the absolute best (especially the ones we used to get at the local Amish market…really, no words for how good those were), but everyone has a standard lemon bar recipe in their back-pocket.  Lemon melting moments sounded like a yummy alternative.  I think they’re an Australian treat, and since I’ve recently visited Australia I feel I’m now quite the expert on all things down-under.  (OK, not really, but still…)  These cookies literally melt in your mouth, probably due the abundance of butter and cornstarch.  If you love lemon bars, you will also love this sweet treat.  (more…)

These were just for a little fun.  They’re so easy for kids to decorate and produce a cute and recognizeable outcome!  We had friends from age 2 – 9 decorating with chocolate and vanilla frosting and a variety of candy options.  Just use my favorite sugar cookie recipe, add some cocoa powder to the buttercream frosting (to taste) and decorate away!  (more…)

Sugar cookies…yum!  These aren’t the beautifully decorated, professional-looking variety.   But these are soft and melt in your mouth (probably due to the sour cream, I love baking with sour cream).  And they’re sweet, but not too sweet (of course the frosting makes up for that).  Even Andrew loves and frequently requests these, and he’s not much for sweets (weirdo).  (more…)

Low(er)-fat, lower-sugar chocolate chip cookies?  They look yummy, right?
